Chauffer the Huile d'olive in a non-stick frying pan then Ajouter the sliced Oignon and Cuire on a medium Chauffer until completely softened, so around 15 mins, adding a little splash of water if they start to stick at all

Crush in the Ail and Cuire for a 2-3 mins further, then Ajouter the Beurre

Once the Beurre is foaming a little, Ajouter the mushrooms and Cuire for around 5 mins until completely softened

Assaisonner everything well, then tip onto a plate.

Tip the Farine into a bowl with a big pinch of Sel and Poivre, then toss the steak in the seasoned Farine

Ajouter the steak pieces to the pan, splashing in a little oil if the pan looks particularly dry, and Frire for 3-4 mins, until well coloured

Tip the onions and mushrooms back into the pan

Fouetter the crème fraîche, mustard and Bœuf stock together, then Verser into the pan

Cuire over a medium Chauffer for around 5 mins

Scatter with Persil, then Servir with pappardelle or Riz.
