Melt the Beurre in a thick-based pan and gently Cuire the Oignon without colour until it is soft.

Ajouter the Riz and Remuer to coat all the grains in the Beurre

Ajouter the wine and Cuire gently stirring until it is absorbed

Gradually Ajouter the hot stock, stirring until each addition is absorbed

Keep stirring until the Riz is tender

Assaisonner with the Citron juice and zest, and Poivre to taste. (there will probably be sufficient saltiness from the Saumon to not need to Ajouter Sel) Remuer gently to Chauffer through

Servir scattered with the Parmesan and seasonal vegetables.

Griller the Saumon and gently place onto the risotto with the prawns and asparagus
