In a large bowl, Fouetter together 1/2 Tasse buckwheat Farine, 2/3 Tasse all-purpose Farine, 1/2 Cuillère à café Sel, and 1 Cuillère à café yeast.

Make a well in the center and Verser in 1 Tasse warm Lait, whisking until the batter is smooth.

Couvrir the bowl and let the batter rise until doubled, about 1 hour.

Enrich and Rest the Batter

Remuer 2 Cuillères à soupe melted Beurre and 1 Œuf yolk into the batter.

In a separate bowl, Fouetter 1 Œuf white until stiff, but not dry.

Incorporer délicatement the whisked Œuf white into the batter.

Couvrir the bowl and let the batter stand 20 minutes.

Pan-Frire the Blini

Chauffer Beurre in a large nonstick skillet over medium Chauffer.

Drop quarter-sized dollops of batter into the pan, being careful not to overcrowd the pan

Cuire for about 1 minute or until bubbles form.

Turn and Cuire for about 30 additional seconds.

Retirer the finished blini onto a plate and Couvrir them with a clean kitchen towel to keep warm

Ajouter more Beurre to the pan and repeat the frying process with the remaining batter.
