Soak the Haricots overnight in plenty of water

Égoutter, Rincer, then place in a pan covered with water

Bring to the Bouillir, reduce the Chauffer, then Mijoter for approx 50 mins until slightly tender but not soft

Égoutter, then set aside.

Chauffer oven to 180C/160C fan/gas 4

Chauffer the Huile d'olive in a large frying pan, tip in the Oignon and Ail, then Cuire over a medium Chauffer for 10 mins until softened but not browned

Ajouter the Tomate purée, Cuire for a further min, Ajouter remaining ingredients, then Mijoter for 2-3 mins

Assaisonner generously, then Remuer in the Haricots

Tip into a large ovenproof dish, then Cuire au four for approximately 1 hr, uncovered and without stirring, until the Haricots are tender

The Haricots will absorb all the fabulous flavours and the sauce will thicken

Allow to cool, then scatter with Persil and drizzle with a little more Huile d'olive to Servir.
