In a large cast iron skillet or sauté pan with a lid, Chauffer oil over medium high Chauffer

Ajouter the Oignon and sauté for 2-3 minutes, until softened

Ajouter the peppers and Ail, and sauté for an additional 3-5 minutes

Ajouter the tomatoes, cumin, paprika, Sel, and chili powder

Mélanger well and bring the mixture to a Mijoter

Reduce the Chauffer to medium low and continue to Mijoter, uncovered, 10-15 minutes until the mixture has thickened to your desired consistency. (Taste the sauce at this point and adjust for Sel and spice, as desired.) Using the back of a spoon, make four craters in the mixture, large enough to hold an Œuf

Crack one Œuf into each of the craters

Couvrir the skillet and Mijoter for 5-7 minutes, until the Œufs have set

Servir immediately with crusty Pain or pita.
