    Mash the ricotta and Battre well with the Œuf yolks, Remuer in the Farine, Sucre, cinnamon, grated Citron rind and the rum and Mélanger well

    You can do this in a food processor

    Battre the Œuf whites until stiff, Incorporer délicatement in and Verser into a buttered and floured 25cm cake tin

  4. 4

    Cuire au four in the oven at 180ºC/160ºC fan/gas 4 for about 40 minutes, or until it is firm.

    Servir hot or cold dusted with icing Sucre.
